Fried Purple Potatoes

A Strange Pudding

Purple Potatoes

Purple potatoes. Julienned.

Duck fat. Hot.

Garam masala. Sprinkled.

Salt and pepper. Pinched.

Purple potatoes, duck fat, garam masala, salt and pepper. Served.

Delicious. Oddly sweet. Tastes like a strange pudding.

Lydia,
The flavor was quite surprising, but also quite good.

Katerina,
That was the best of 20 photos I took and it was still a bit difficult to tweak in my photo editor.

OK, where did you get the duck fat, or did you render it yourself? Need, need, need to know!!! The fries look wonderful! I recently bought some of the garam masala because I had read about it, but don't know how to use it, except for your using it on fries. I can't remember the recipe that sounded so good it made me want to get some and try it. Would it be good in ground pork, as in sausage?!

Judy,

"OK, where did you get the duck fat, or did you render it yourself? Need, need, need to know!!!"

Some of it I rendered and I bought in order to have enough to make duck confit. You can buy it here: http://www.hudsonvalleyfoiegras.com/foiegrasmarket.html

"Would it be good in ground pork, as in sausage?!"

It would. Probably better in a lamb or chicken sausage than pork, though.

Yum. Spicy purple potato French fries. Luv purple potatoes, though have no idea if I could pick them out in a blind tasting. Have you ever tried?

Elise,
"have no idea if I could pick them out in a blind tasting. Have you ever tried?"

Nope, but they do seem to have a noticably sweet flavor and particularly creamy texture.
